Why is the flour used in white sauce? Can we substitute it for anything else?

Flour gives a thick and creamy texture to your white sauce. There is no better substitute for flour, however, you may use cornstarch. Although it won’t work well as a thickening agent for the sauce you can pull it off with a bit of care. Make sure you only use half of the amount used for flour (eg. 3 tbsp flour = 1.5 tbsp cornstarch) and mix it with equal amounts of cold water first before adding to the sauce mixture.

Added a lot of milk but the sauce is still not smooth or creamy as shown.

There are a few things you need to take care of when making the white sauce:
1. Make sure your ratio of ingredients is kept exactly as shown in the recipe. If you’re making more than the shown amount, maintain the ratio of fat and flour.
2. Milk used should preferably be normal or warm. Cold milk takes longer to form the perfect texture.
3. Add milk periodically in small amounts and continuously whisk the sauce.
4. Cook for the appropriate time. Raw or extra cooked flour will not give the perfect sauce. You may taste test the sauce to check if the flour is still raw.

Can we include cheese in this recipe? (For the cheese-lovers out there)

Yes, you may add cheese to the sauce to make it into a cheese sauce. Add around 1 tablespoon of grated parmesan cheese or/and 4 tbsp of cheddar cheese. Keep whisking to get a deliciously creamy white cheese sauce.

Is bechamel sauce the same as white sauce?

Yes, they are. ‘Bechamel’ is the french word for white sauce (France is where the traditional bechamel originated from). ‘Roux’ is the french word used for the flour-butter mixture.

Ingredients

  • Boiling the Pasta
  • 2 cup Pasta

  • 6 cup Water

  • 1 tsp Salt

  • Stir-frying the vegetables and chicken
  • 1 tbsp Cooking oil

  • 200 gm Chicken

  • 1/3 cup Mushroom

  • 1/4 cup Corn

  • 1/3 cup Broccoli florets

  • 1/2 tsp Salt

  • 1/2 tsp Black pepper powder

  • 1 tsp Oregano

  • Preparing White Sauce
  • 3 tbsp Butter

  • 1 tbsp Garlic chopped

  • 3 tbsp All-purpose flour

  • 2 cup Milk

  • 2 tbsp Cooking cream

  • 1/2 tsp Black pepper powder

  • 1/2 tsp Salt

  • 1 tsp Red chili flakes

  • 1 tsp Oregano

Directions

  • Boiling the Pasta
  • Into a heating pot, add water 6 cups and warm it properly.
  • Add pasta 2 cups, salt 1 tsp, and let the pasta boil for about 8-10 minutes on medium heat.
  • Cook the pasta only 3/4th done (80%).
  • Strain the pasta from a strainer and pour cold water on it (passing through) to avoid sticking.
  • Stir-frying the vegetables and chicken
  • Into a heating frying pan add cooking oil 1 tbsp, chopped garlic 1 tbsp and cook the garlic for about 2-3 minutes till the raw smell goes off.
  • Add boneless chicken pieces 200 gm and let it cook for about 7-8 minutes on medium heat.

  • Add salt 1/2 tsp, black pepper powder 1/2 tsp, oregano 1 tsp and fry for about 1-2 minutes on high heat.
  • Take out stir-fried chicken and vegetables into a plate – keep aside for later use.
  • Preparing the White Sauce
  • Into a heating frying pan add butter 3 tbsp, all-purpose flour 3 tbsp, and roast the flour in butter for about 2-3 minutes on low heat.
  • Add milk 2 cups gradually and continuously stir it on low heat.
  • Stir and cook until it gets smooth.
  • Add cooking cream 2 tbsp, black pepper powder 1/2 tsp, salt 1/2 tsp, red chili flakes 1 tsp, oregano 1 tsp – mix it well.
  • Preparing White sauce Chicken Pasta
  • Add the already stir-fried vegetables and chicken into the white sauce and mix well.
  • Add already boiled pasta into it and coat it with white sauce.
  • The Pasta is ready!
