Healthy and Nutritious egg recipe with flavourful vegetables and spices


  • Preparing the Eggs
  • 5 pcs Eggs

  • 1/4 tsp Salt

  • 1/4 tsp Black pepper powder

  • Preparing Anda Bhurji / Scrambled Eggs
  • 1 tbsp Cooking oil

  • 2 tbsp Butter

  • 1 cup Onion

  • 1/2 tbsp Ginger garlic paste

  • 3 pc Green chili

  • 1 cup Tomato

  • 1 tsp Salt

  • 1/2 tsp Turmeric powder

  • 1/2 tsp Red chili powder

  • 1 tsp Coriander powder

  • 1/2 tsp Cumin powder

  • 1/3 cup Capsicum

  • 2 tbsp Coriander leaves


  • Preparing the Eggs
  • Into a large bowl add eggs 6 pcs, salt 1/4 tsp, black pepper powder 1/4 tsp and slowly beat the eggs for about 1-2 minutes and keep it aside.
  • Preparing Anda Bhurji / Scrambled Eggs
  • Into a heating frying pan add cooking oil 1 tbsp, butter 2 tbsp, chopped onion 1 cup and fry the onions until become light brown on high heat.
  • Now add ginger garlic paste 1/2 tbsp, chopped green chilies 3 pcs and sauté it for about 2minutes until raw smell goes off.
  • After this add chopped tomato 1 cup and let it cook for about 3-4 minutes until the tomatoes become soft on medium to high heat.
  • Then add salt 1 tsp, turmeric powder 1/2 tsp, red chili powder 1/2 tsp, coriander powder 1 tsp, cumin powder 1/2 tsp and let it cook for about 2 minutes on medium heat.
  • Now add chopped capsicum 1/3 cup and fry for about 2-3 minutes on high heat.
  • Add beaten eggs into the wok and start stirring slowly.
  • Cook the eggs for about 3-4 minutes on medium to high heat and cook them until they are done
  • Stir continuously and break the lumps if they formed.
  • Add freshly chopped coriander 2 tbsp and stir for about 1-2 minutes on high heat.
  • Serve it hot with paratha or naan in your breakfast.
