Potato Corn Rolls is an instant party snack and also loved by kids – with a delish dipping sauce. You could prepare the rolls in advance (even refrigerate them) and just quickly fry them few minutes before you eat ūüėÉ

Ingredients

  • 1¬†cup¬†Boiled corn

  • 2¬†pc¬†Boiled mashed potatoes

  • 2¬†tbsp¬†Capsicum

  • 2¬†tbsp¬†Onion

  • 2¬†tbsp¬†Carrot

  • 1/2¬†tsp¬†Salt

  • 1/4¬†tsp¬†Red chili powder

  • 1/2¬†tsp¬†Coriander powder

  • 2¬†tbsp¬†Parsley

  • 1¬†tbsp¬†Rice flour

  • 1/2¬†tbsp¬†Gram flour

  • 2¬†pc¬†Green chili

  • 4¬†tbsp¬†Cooking oil

Directions

  • Transfer boiled corn 1 cup into a blender with water 1 tbsp and coarsely blend the corn.
  • Transfer the blended corn into a bowl, add boiled and mashed potatoes 2 medium, chopped carrot 2 tbsp, freshly chopped parsley 2 tbsp, chopped capsicum 2 tbsp, chopped green chilies 2 pc, gram flour 1/2 tbsp, coriander powder 1/2 tsp, rice flour 1 tbsp, chopped onion 2 tbsp, pink salt 1/2 tsp, red chili powder 1/4 tsp and mix everything well.
  • If the mixture is a little runny to hold, add more rice flour 1/4 cup and mix (this is to give it a rite thickness balance).
  • Grease your palm with some cooking oil and start making the potato corn roll shapes.
  • Add cooking oil 4 tbsp in a frying pan and place all your rolls into the pan.
  • Fry the rolls for about 15-20 minutes on medium to high flame till they become golden brown. Keep shifting the sides to fry the roll well on all sides.
  • Once the rolls are well cooked, transfer them into a paper towel and serve it hot with sauce/ketchup of your choice.

  • If you are cooking this dish for your kids you can reduce or skip the chili accordingly.
  • Instead of roll shapes, you could make different shapes.
