Ingredients

  • Marinating the Chicken
  • 500 gm Chicken

  • 1/2 tsp Salt

  • 1/4 tsp Turmeric powder

  • 1/2 tsp Red chili powder

  • 1 tbsp Lemon juice

  • 4 tbsp Curd

  • Preparing the Masala Paste
  • 2 medium Fried Onions

  • 10 pc Almonds soaked

  • 8 pc Pistachio soaked

  • 2 tbsp Parsley

  • 1/3 cup Water

  • Preparing the Chicken
  • 3 tbsp Cooking oil

  • 4 pc Cloves

  • 1 Cinnamon stick

  • 4 Cardamom Pods

  • 1 Black Cardamom

  • 1 Star anise

  • 1 Bay leaf

  • 2 tbsp Ginger Garlic

  • 2 tsp Coriander powder

  • 1/2 tsp Garam Masala Powder

  • 1/4 tsp Salt

  • 1 tbsp Fresh Cream

  • 1 tbsp Butter

  • 1 tbsp Fried Onion

  • 2 tbsp Parsley

  • 4 pc Green chili

Directions

  • Marinating the Chicken
  • In a bowl take chicken 500 gm, salt 1/2 tsp, turmeric powder 1/4 tsp, red chili powder 1/2 tsp, lemon juice 1 tbsp, whisked curd 4 tbsp – mix and marinate the chicken for 30 minutes.
  • Preparing the Masala Paste
  • In a blender add fried onions 2 medium, chopped parsley 2 tbsp, soaked pistachios 8 pc, soaked almonds 10 pc, water 1/2 cup, and blend it to make a smooth paste. Keep the masala paste aside for later use.
  • Preparing the Chicken Curry
  • In a heating pot add cooking oil 3 tbsp, cloves 4 pc, star anise 1 pc, cinnamon stick 1 pc, black cardamom 1 pod, bay leaf 1 pc, green cardamom 4 pods, crushed ginger garlic 2 tbsp – fry the spices well for 2-3 minutes on medium to high heat.
  • Add already prepared blended masala paste into the spices and fry it for 5-6 minutes on medium to high heat.
  • Add garam masala powder 1/2 tsp, coriander powder 2 tsp, and water 1/2 cup from the same used blender and cook it for 5 minutes on medium to high heat.
  • Add marinated chicken into the pot and stir well –  let it fry for 5-6 minutes on medium to high heat.
  • Cover and let it cook for another 7-8 minutes on medium to high heat – after, add water 3/4 cup, salt 1/4 tsp and stir well.
  • Again, cover and let it cook for 18-20 minutes on low to medium heat.
  • After, add fresh cream 1 tbsp, chopped parsley 1 tbsp, fried onions 1 tbsp, whole green chili 4 pc, butter 1 tbsp and cook for one last 2-3 minutes on medium to high heat.
  • The Mughlai chicken is ready – Take out & serve with rice or naan.

Notes

  • You can add cashews instead of pistachios.
  • Avoid red chili powder if you are making it for the kids.
  • Adjust the amount of salt according to your taste and flavour.
