The word ‘Halwa’ originated from the middle east, meaning ‘sweet’. Carrot pudding traditionally known as Gajar ka Halwa in India is a delightful dessert that is guaranteed to be enjoyed by many. Because of its vibrant color, it looks just as appealing as it tastes. The presence of butter and milk makes it a rich and dense pudding and is capable of being a satisfying meal by itself. Not to forget, it is also nutritious as it contains carrots and other dried fruits. It is equally appetizing when consumed hot or chilled.

Ingredients

  • 3 lb Carrot Chopped

  • 3 Cups Milk 2%

  • 4 Tbsp Butter

  • 1+1/2 Cup Sugar Brown

  • 5 Pcs Cardamom Roughly Grounded

  • 1 Tbsp Raisins

  • 1 Tbsp Cashew Chopped

  • 1 Tbsp Pistachio Chopped

  • 1 Tbsp Almonds Chopped

Directions

  • In a Heating pressure cooker, add 2 Tbsp of butter.
  • As the butter starts melting, add 5 grounded cardamoms.
  • Stir for 2 minutes and add 1.36 kg (3 lb)of chopped carrots, keep stirring for 7 minutes and add 1 cup of milk in it.
  • Cover the lid of the cooker and cook it for 2 whistles.
  • When the cooker cools down open the lid and stir the carrot mixture for 2 minutes and keep it aside.
  • In a heating pan, add 1 Tbsp of butter.
  • As the butter melts add the cooked carrot mixture in it, then add 2 cups of milk and start stirring and mashing the carrots with the help of a spatula or masher.
  • Cook it for 15 minutes on high flame and keep stirring.
  • After 15 minutes add chopped pistachios 1 tbsp, raisins 1 tbsp, chopped almonds 1 tbsp & chopped cashew 1 tbsp. Now, stir the mixture for brief 2 minutes.
  • When the milk dries, add 1+1/2 cup of sugar and 1 tbsp of butter, stir it continuously for 10 minutes until the mixture is well dissolved and the butter appears at the edge of the pan.
  • Serve it with dry fruit garnish on top.

Notes

  • Always keep stirring the carrot when it’s cooking on the pan to avoid it from sticking at the bottom.
  • We use orange carrot in the recipe, but both red & orange carrot can be used for the recipe.
  • The butter can be substituted with ghee also.
