What is the substitute used for an egg in this bread recipe?

Eggs are a key ingredient in cakes or bread to provide structure and stability. In this case, we are using mashed bananas as a partial substitute. The thick mixture created by the banana batter gives a perfectly solid structure when baked. The addition of cooking oil with yogurt and baking powder also substitutes for the liquid meant to be filled by eggs.

Learn how to make this awesome eggless banana bread – have a tasty teatime every time!

Ingredients

  • 3 Banana

  • 1+1/2 cup All-purpose flour

  • 1 tsp Baking powder

  • 1/2 tsp Baking soda

  • 1/4 tsp Salt

  • 3/4 cup Sugar

  • 1/3 cup Cooking oil

  • 1/4 cup Yogurt

  • 1 tbsp Vanilla flavor

  • 1/3 cup Milk

  • 1/2 cup Nuts

Directions

  • Grease the loaf pan inside with cooking oil, then coat the inside with all-purpose flour.
  • Preparing the dry ingredients
  • Into a bowl take all-purpose flour 1+1/2 cups, baking soda 1/2 tsp, salt 1/4 tsp, baking powder 1 tsp, and mix the dry ingredients well – keep it aside for later use.
  • Preparing the wet ingredients
  • In a bowl put ripe bananas 3 and mash them properly – add fine sugar 3/4 cup and stir properly to mix the banana and sugar well.
  • Add cooking oil 1/3 cup, yogurt 1/4 cup, milk 1/3 cup, vanilla flavor 1 tbsp, and mix everything properly.
  • Preparing the bread mixture
  • After, gradually add already prepared dry mixture – mix in a circle and cut motion (as shown in the video tutorial).
  • Add nuts 1/2 cup into the batter and mix lightly- do not over mix at this time.
  • Pour the bread mixture into the already greased loaf pan – tap the pan to even the layer.
  • Add sliced almonds as topping on the bread mixture.
  • Bake the bread – Place it in a preheated oven for about 65 – 70 minutes at 355°F/180°C.
  • After 70 minutes -as the bread gets baked take out and let it cool down at room temperature.
  • The soft and delicious banana bread is ready to serve.

  • You can use any nut or dry fruit of your choice as toppings.
  • You can use a round baking pan instead of a loaf pan to bake the bread.
  • Instead of greasing the loaf pan, you can use butter paper to bake the bread as well.
