The much milder alternative of all those spicy chicken curry dishes, the coconut chicken curry brings in health benefits of having coconut in your diet and never having to miss out on chicken curry’s with your Roti or Rice | Note: You can always garnish the final dish with some grated coconut for added taste !

Ingredients

  • 500 gm Chicken

  • 1 cup Coconut milk

  • 3 tbsp Cooking oil

  • 2 pc Onion medium

  • 1 tbsp Ginger garlic paste

  • 2 pc Green chili

  • 3 tbsp Parsley

  • 1 tsp Cumin seeds

  • 3 pc Green cardamom

  • 1 pc Bay leaf

  • 5 pc Cloves

  • 1 pc Black cardamom

  • 1/2 tsp Red chili powder

  • 1/2 tsp Fennel seeds

  • 1/2 tsp Turmeric powder

  • 1 tsp Coriander powder

  • 1/2 tsp Salt

Directions

  • In a heating pot add cooking oil 3 tbsp, add cumin seeds 1 tsp, bay leaf 1 pc, green cardamom 3 pods, black cardamom 1 pod, cloves 5 pc and onion sliced 2 medium and stir everything for 3-4 minutes.
  • Add ginger-garlic paste 1 tbsp, green chili chopped, and give it a good stir.
  • Then, add turmeric powder 1/2 tsp, crushed fennel seeds 1/2 tsp, red chili powder 1/2 tsp, coriander powder 1 tsp.  Also, add water 1 tbsp to avoid the spices burning at the bottom.
  • Stir well, then add salt 1/2 tsp and cook everything for 2-3 minutes on medium flame.
  • Add chicken 500 gm and stir the mixture. After, cover and let the chicken cook for about 6-7 minutes on medium to high flame, in between open and keep giving brief stirs.
  • After 7 minutes of cooking, add coconut milk 1 cup – stir – cook for 5 more minutes on medium to high flame.
  • The coconut chicken curry is ready. Add freshly chopped parsley 3 tbsp and serve it hot with chapati or rice.

  • Use salt according to your taste and diet requirements.
  • If you are cooking this dish for your kids you can reduce or skip the green chilies and red chili powder.
