This recipe of Chicken Vindaloo is having a spice kick into it. The red chili masala paste is prepared to marinate the chicken before cooking it and brings a spicy flavor into it.

Ingredients

  • To prepare chili paste
  • 5 pc Dry red chili

  • 1 tsp Cumin seeds

  • 1/4 tsp Fenugreek seeds

  • 1 tsp Black peppercorn

  • 1 pc cinnamon stick

  • 4 pc Clove

  • 5 clove Garlic

  • 1/2 inch Ginger

  • 1 tsp Coriander seeds

  • 2 tbsp Vinegar

  • 3 tbsp Water

  • To marinate the chicken
  • 500 gm Chicken

  • To prepare chicken vindaloo
  • 2 tbsp Cooking oil

  • 3 pc Onion chopped

  • 1 tsp Salt

  • 3/4 cup Water

  • 2 tbsp Coriander freshly chopped

  • 3 pc Green chili slits

Directions

  • Prepare the chili paste
  • Into a grinder, add cumin seeds 1 tsp, fenugreek seeds 1/4 tsp, black peppercorns 1 tsp, dry red chili 5 pc, cinnamon stick 1 pc, clove 4 pc, garlic 5 cloves, ginger 1/2 inch, coriander seeds 1 tsp, vinegar 2 tbsp, water 3 tbsp – Grind it to make chili paste and keep aside for later use.
  • Marinating the chicken
  • Into a bowl, take chicken 500 gm – add the already prepared chili paste – mix it well and keep it marinate for 1 hour.
  • Prepare chicken vindaloo
  • Into a heating pan, add cooking oil 2 tbsp, finely chopped onion 3 pc, and let the onions fry till translucent on high heat.
  • Into it, add the marinated chicken and let it roast for 5-6 minutes on medium to high heat.
  • After this add salt 1 tsp, water 3/4 cup, then stir it well – cover and cook for about 20 minutes on medium heat.
  • Add freshly chopped coriander 2 tbsp, green chili slits 3 pc and give it a last stir.
  • The Chicken Vindaloo is ready to serve.

Notes

  • You can also use Kashmiri red chili instead of red chili.
  • Feel free to reduce the amount of red chili according to spice tolerance & diet requirement.
  • You could substitute chicken with mutton or beef as well to prepare Beef or Mutton Vindaloo.
