What is the difference between tandoori chicken and chicken tikka?

Chicken tikkas are small pieces of chicken skewered on a stick and roasted with rich spices. While tandoori chicken is a while chicken is a large piece of chicken skewered and grilled in a large special oven.

Is the reddish color in chicken tikka normal?

Usually, the spices give the tikka a bright red color, but garish red is usually an indication of added artificial coloring. We never recommend nor use artificial coloring in any of our recipes. It’s still got the same mouth-watering effect and look.

In chicken tikka biryani’s, we marinate and fry the chicken with unique masala combinations – before adding it to form biryani layers – this process gives it that unique tikka taste.

Ingredients

  • Marinating the chicken
  • 800 gm Chicken

  • 2 tbsp Lemon juice

  • 1 tsp Salt

  • 1 tsp Red chili powder

  • 1 tsp Black pepper powder

  • 1 tsp Garam masala powder

  • 2 tsp Ginger garlic paste

  • 1 tsp Biryani masala

  • 1 tsp Coriander powder

  • 1 tbsp Cooking oil

  • Preparing the rice
  • 500 gm Rice

  • 2 ltr Water

  • 5 pods Green cardamom

  • 1 pc Cinnamon stick

  • 6 pc Cloves

  • 1 pod Black cardamom

  • 1 pc Star anise

  • 2 pc Bay leaf

  • 4 pc Green chili

  • 1 tsp Salt

  • 1 tsp Cumin seeds

  • Preparing the biryani
  • 2 tbsp Cooking oil

  • 1/2 cup Cooking oil

  • 1 cup Onion

  • 1 pc Tomato

  • 1 tsp Ginger garlic

  • 1/2 tsp Salt

  • 1 tsp Red chili powder

  • 2 tsp Coriander powder

  • 5 tbsp Yogurt

  • 1 tbsp Biryani masala

  • 5 pcs Cloves

  • 5 pods Green cardamom

  • 1 pc Bay leaf

  • 1 pod Black cardamom

  • 1 pc Star anise

  • 1 pc Cinnamon stick

  • 5 pcs Black peppercorns

Directions

  • Marinating the chicken
  • Into a bowl take chicken 800 gm, lemon juice 2 tbsp, salt 1 tsp, garam masala powder 1 tsp, red chili powder 1 tsp, black pepper powder 1 tsp, biryani masala 1 tsp, coriander powder 1 tsp, crushed ginger garlic 2 tsp, cooking oil 1 tbsp and mix everything properly and let it marinate for 30 minutes.
  • Preparing the rice
  • Into a heating pot, take water 2 ltr, green cardamom 5 pc, cinnamon stick 1 pc, cloves 6 pc, black cardamom 1 pc, bay leaf 1 pc, whole green chili 4 pc, star anise 1 pc, salt 1 tsp, basmati rice 500 gm (soaked for 1 hour in water), cumin seeds 1 tsp and let the rice boil for about 8-10 minutes on high heat.
  • Cook the rice only 3/4th done.
  • Then strain the rice and keep it aside for later use.
  • Preparing the chicken tikka fry
  • In a heating frying pan, pour cooking oil 2 tbsp and add marinated chicken pieces into the heating oil.
  • Fry each side of the chicken for about 2 minutes on high heat.
  • Then reduce the heat to medium-high and fry the chicken for 6-7 minutes.
  • After the chicken is well fried,  take out the chicken and keep it aside for later use.
  • Preparing the biryani
  • In a heating pot add cooking oil 1/2 cup, star anise 1 pc, cinnamon stick 1 pc, green cardamom 5 pc, black peppercorns 5 pc, cloves 5 pc, black cardamom 1 pc, bay leaf 2 pc, sliced onion 1 cup and cook the onions on high heat till it turns brown.
  • Into it, add chopped tomato 1 medium – cook for about 2-3 minutes on medium to high heat.
  • Then, add ginger garlic 1 tsp and let it cook for about 2-3 minutes on medium to high heat.
  • Add salt 1/2 tsp, coriander powder 2 tsp, red chili powder 1 tsp and let all the spices cook for about 2-3 min on medium to high heat.
  • Add biryani masala 1 tbsp and cook for about 3 minutes on medium to high heat.
  • Add whisked yogurt 5 tbsp and stir the curd on low heat – let it cook till oil releases from sides.
  • After this add fried chicken into the masala and let the chicken cook for about 2-3 minutes on medium to high heat.
  • Preparing the Biryani Layers
  • Once the chicken tikka gravy is ready to separate half into a bowl.
  • Add half of the already prepared boiled rice on top of the half-kept chicken tikka gravy – add fried onions 3 tbsp, chopped mint 3 tbsp.
  • Then add a layer of remaining chicken tikka gravy on it, and again add the remaining rice as a final layer, sprinkle fried onions 3 tbsp, freshly chopped mint 3 tbsp, orange food color 1/2 tbsp.
  • Now cover with a lid and let the biryani cook for about 10-12 minutes on low heat.
  • After, open the lid and stir the biryani and serve it hot with salad and raita.

Notes

  • You can also use boneless chicken for making chicken tikka.
  • You can skip the spices if you are making it for your kids.
  • Adjust the salt according to your taste and flavour.
