Although Rogan Josh is authentically made with lamb, they are improvised with the meat of any kind. They are prepared accordingly and made with the same essence and taste rogan josh is meant to uphold.

In this recipe, we’ll be preparing a rogan josh made with chicken. Have it with your roti or bread for the full experience.

A tasty chicken curry, the Rogan Josh chicken is native to Kashmir and cooked with abundant red chili in the recipe. The recipe we show here is authentic, delicious, and yet simple to follow.


  • 5 pc Dry Red Chili

  • 4 tbsp Cooking Oil

  • 1 tsp Cumin Seeds

  • 4 pc Cloves

  • 4 pods Green Cardamom

  • 2 pc Onion medium

  • 500 gm Chicken

  • 1 tsp Salt (or according to diet)

  • 3/4 cup Curd

  • 1/2 tsp Fennel powder

  • 1/4 tsp Asafoetida

  • 3 tbsp Butter


  • Preparing the chili paste
  • Soak dry red chili 5 pc and grind them with a grinder to make paste-like. Keep this chili paste aside for later use.
  • Preparing the chicken
  • In a heating pot, add cooking oil 4 tbsp, cumin seeds 1 tsp, cloves 4 pc, green cardamom pods 4 pc, sliced onions 2 medium – fry them for 3-4 minutes till onions become light golden.
  • Add chicken 500 gm into it – fry the chicken till a lite color changes, then close and cook for 5-6 minutes on low to medium heat.
  • Open and stir well for 2 minutes – then add salt 1 tsp, fennel seeds powder 1/2 tsp, whisked curd 3/4 cup – stir well.
  • Add already prepared red chili paste, crushed ginger 1 tsp – stir well, close, and cook for 15-18 minutes on low to medium heat.
  • Open and add butter 3 tbsp – let it cook for 5 more minutes.
  • The chicken rogan josh is ready to serve. You could garnish it with chopped parsley for added taste and have it with rice or naan.

  • You could always increase or decrease dry red chili according to your spice tolerance.
  • You could also replace dry red chili with Kashmiri red chili powder & mix into the curd and use.
