What are the ingredients used to make the Kolhapuri masala?

Grated coconut, green and black cardamom, cinnamon, blade of mace, star anise, dry red chili, clove, black pepper, fenugreek seeds, fennel seeds, cumin seeds, coriander seeds, sesame seeds, poppy seeds are all ground with tamarind pulp to get a tasteful Kohlapuri masala.

Can we add cashew nuts to the masala?

They can be used as a substitute for poppy seeds, adding them would be needless otherwise since its taste might be unnoticeable with the other spices.

How do we make the chicken tastier?

You can marinate the chicken in the masala for longer than an hour so that it can soak it up well.

Deliciously prepared with aromatic and fresh kolhapuri masala mix. All the flavors came out from the spice mix prepared from scratch at home.

Ingredients

  • Preparing Kolhapuri Masala
  • 1/3 cup Coconut Grated

  • 3 pod Cardamom Green

  • 1 pc Cinnamon Stick

  • 1 pc Cardamom Black

  • 1 pc Mace Blade

  • 1 pc Star anise

  • 1 tbsp Coriander Seeds

  • 1 tsp Cumin Seeds

  • 1 tsp Fennel Seeds

  • 8 pc Black Peppercorn

  • 3 pc Cloves

  • 1/4 tsp Fenugreek Seeds

  • 1 tsp Sesame Seeds

  • 1 tsp Poppy Seeds

  • 3 pc Red chili Dry

  • 1 tbsp Tamarind Pulp

  • 4 tbsp Water

  • Marinating The Chicken
  • 500 gm Chicken

  • 1/2 tsp salt

  • 1/2 tsp Turmeric Powder

  • 2 tsp Kashmiri Red Chili Powder

  • Preparing Chicken Kolhapuri
  • 3 tbsp Cooking oil

  • 1 pc Onion Chopped

  • 1 tbsp Ginger garlic

  • 1 pc Tomato Paste

  • 1/2 tsp Salt

  • 1 cup Water

  • 2 tbsp Coriander Freshly chopped

Directions

  • Preparing Kolhapuri Masala
  • Into a heating frying pan, add grated coconut 1/3 cup and roast it for about 2-3 minutes on medium heat.
  • Add green cardamom 3 pods, cinnamon stick 1 pc, black cardamom 1 pc, mace blade 1 pc, star anise 1 pc, dry red chili 3 pc, clove 3 pc, black peppercorns 8 pc and give it a quick stir.
  • Add fenugreek seeds 1/4 tsp, fennel seeds 1 tsp, cumin seeds 1 tsp, coriander seeds 1 tbsp – give it a quick stir.
  • Add sesame seeds 1 tsp, poppy seeds 1 tsp, and roast the spices on medium heat until they become light brown and aromatic – let it cool down a bit.
  • Put the roasted spices into a grinder. Add tamarind pulp 1 tbsp, water 1/3 cup into it and grind it to make kolhapuri masala – keep the masala aside for later use.
  • Marinating The Chicken
  • Into a bowl, take chicken 500 gm, salt 1/2 tsp, turmeric powder 1/2 tsp, Kashmiri red chili powder 2 tsp – stir well and let it marinate for 1 hour.
  • Preparing Chicken Kolhapuri
  • Into a heating pot, add cooking oil 3 tbsp, chopped onion 1 pc – let it fry on high heat till it becomes light brown.
  • Add ginger garlic 1 tbsp and cook until raw ginger garlic smell goes off.
  • Add the ground kolhapuri masala – cook it for about 4-5 minutes on med to high heat till the oil releases.
  • Add the marinated chicken into it – roast it for about 2-3 minutes on high heat.
  • Add tomato paste 1 tomato, salt 1/2 tsp – stir well & add water 1 cup.
  • Cover and let it cook for about 18-20  minutes on medium heat.
  • After, open & add freshly chopped coriander 2 tbsp – stir well.
  • The Chicken Kolhapuri recipe is prepared to serve

Notes

  • While roasting the spices, add the small-sized whole spices towards the end to avoid smaller spices getting burnt.
  • You can always reduce or increase the number of spices according to your taste.
  • You could also substitute tamarind pulp with lemon juice or simply skip the ingredient (in case you didn’t have this ingredient). This could bring in a slight change in the taste – still, the recipe is going to be delicious.
