Chicken karahi (known as gosht karahi when prepared with goat or lamb meat instead of chicken), or Kadai chicken, is a well-known dish originating from the Indian subcontinent. It’s known for its spicy taste and is famous in Indian and Pakistani cuisine.

What is Karahi curry?

Karahi curry is named after the steep-sided, wok-like pot in which this dish would traditionally be cooked. ‘Karahi’ is the Hindi name for the pot but they’re also known as a kadai, korai, or kadhi and are used for shallow or deep frying or to slow cook curries throughout India, Pakistan, and Bangladesh.

Is it better to make Chicken Karahi in the Karahi pot?

If you possess one, then sure. The Karahi pot can capture its original essence and flavor it was meant to traditionally. But modern pots and pans can also cook delicious curries as well as long as you nail down the recipe.

  • Marinating the chicken
  • 500 gm Chicken

  • 1/2 tsp Salt

  • 1/2 tsp Red chili powder

  • 1/2 tsp Cumin powder

  • Preparing the Karahi Masala
  • 3 pc Dry red chili

  • 1/2 tbsp Coriander seeds

  • 1/2 tbsp Black peppercorns

  • 1/2 tbsp Fennel seeds

  • 1/2 tbsp Cumin seeds

  • Preparing Chicken Karahi
  • 2 tbsp Cooking oil

  • 1 tbsp Butter

  • 1/2 tsp Cumin seeds

  • 1 tbsp Ginger garlic

  • 1 tsp Coriander seeds

  • 1 pc Onion

  • 1 pc Tomato

  • 1/2 tsp Red chili powder

  • 1/2 tsp Turmeric powder

  • 1 tsp Coriander powder

  • 1/2 tsp Salt

  • 4 tbsp Curd

  • 1/2 cup Water

  • 1 pc Capsicum cubes

  • 1 pc Onion in petals

  • 1/2 tsp Garam masala

  • 2 tbsp Parsley


  • Marinating the Chicken
  • Into a bowl take chicken 500 gm, salt 1/2 tsp, red chili powder 1/2 tsp, cumin powder 1/2 tsp – mix well and let it marinate for 30 minutes.
  • Preparing the Karahi Masala
  • Into heating frying pan add dry red chili 3 pc, black peppercorns 1/2 tbsp, fennel seeds 1/2 tbsp, cumin seeds 1/2 tbsp, coriander seeds 1/2 tbsp – dry roast all the spices for about 2-3 minutes on low heat.
  • Take out the dry roasted spices into a plate and let the spices cool down at room temperature.
  • Grind the dry roasted spices to form karahi masala and keep it aside for later cooking.
  • Preparing Chicken Karahi
  • Into a heating pot, add cooking oil 2 tbsp, butter 1 tbsp, cumin seeds 1/2 tsp, coriander seeds 1 tsp, finely chopped onion 1 medium, and fry the onions till it becomes light brown.
  • Add ginger garlic 1 tbsp and cook for about 2-3 minutes until raw garlic smell goes off.
  • Add diced tomato 1 medium and let it cook for about 2-3 minutes until the oil separates.
  • Add red chili powder 1/2 tsp, turmeric powder 1/2 tsp, coriander powder 1 tsp, salt 1/2 tsp and let all the spices cook for 2-3 minutes on medium to high heat.
  • After, add marinated chicken into it and stir fry the chicken for 5 minutes on high heat.
  • Then, add whisked curd 4 tbsp – stir it – let it cook for 2-3 minutes on medium to high heat.
  • Add the prepared chicken karahi masala 3 tsp into the chicken gravy and let it cook for 4 minutes on medium to high heat.
  • Add water 1/2 cup – cover with lid – cook for about 10-12 minutes on low to medium heat.
  • Add capsicum cubes 1 medium, onion petals 1 medium, dry red chili 2 pc, garam masala powder 1/2 tsp – cook for last 2 minutes on medium to high heat.
  • Add freshly chopped parsley 2 tbsp and mix well. 
  • Switch off the heat and take out the chicken karahi recipe and serve hot.

  • You can also use red and yellow capsicum to add extra flavors to it.
  • Don’t add red chili if you are cooking for children.
  • You can also marinate the chicken overnight.
