Why is Chicken Handi different from other chicken curries like chicken karahi?

Chicken Handi is traditionally made in a ‘Handi’, which is a cooking pot with a lid. It also uses a creamy sauce which gives a unique taste to it, unlike other chicken curries.

Can we use other utensils to cook, such as an earthen pot?

Of course, you can. It gives you the traditional experience like it was originally meant to. Although it would be delicious regardless of the utensil used as we’ve shown you one made in our nonstick pot, you should definitely experiment it with an earthen pot if you have one at your disposal.

Can ready-made garam masala be used instead?

Yes, you can (although you would lose the authenticity of your dish). If you’re short on time then ready-made masalas are the way to go, but we recommend you try making your own masala otherwise.

Why does the curry become too creamy or thick ?

It’s mainly due to overcooking the dish which vaporizes the liquid. Also more content of creamy ingredients like yogurt and paste can make it thicker.

Chicken Handi – one of the popular chicken recipes in the South Asian households is usually cooked in a mud pot with the flame to get some earthy flavors – since most people in urban living don’t use mud pot & cooking in flame – here we are going to show you how to cook a simple chicken handi the easy way using nonstick pot – authentic ingredients & slow cooking – to get the similar flavor & taste of Chicken Handi recipe.


  • Marinating the chicken
  • 500 gm Chicken

  • 3/4 cup Curd

  • 2 tbsp Lemon juice

  • 1/2 tsp Turmeric powder

  • 1 tsp Red chili powder

  • 1 tsp Salt

  • 1 tsp Cumin powder

  • 1 tsp Coriander powder

  • 1/2 tsp Pepper powder

  • Preparing Sesame Almond Paste
  • 10 pc Almonds

  • 2 tbsp Sesame seeds

  • 2 tbsp Water

  • Preparing Chicken Handi
  • 1 tbsp Cooking oil

  • 2 tbsp Butter

  • 3 pc Green cardamom

  • 1 pc Bay leaf

  • 4 pc Cloves

  • 1 pc Cinnamon stick

  • 2 pc Onion

  • 1 sp Ginger garlic

  • 2 pc Green chili

  • 1 pc Tomato paste

  • 2 tbsp Parsley

  • 2 tbsp Cooking cream


  • Marinating the Chicken
  • Into a large bowl, take chicken 500 gm, curd 3/4 cup, lemon juice 2 tbsp, turmeric powder 1/2 tsp, red chili powder 1 tsp, salt 1 tsp, cumin powder 1 tsp, coriander powder 1 tsp, black pepper powder 1/2 tsp mix and let it marinate for about 30 minutes.
  • Preparing Sesame Almond Paste
  • Into a grinder, add peeled almond 12 pc, sesame seeds 2 tbsp, water 2 tbsp – grind it to make a paste and keep it aside for later use.
  • Preparing Chicken Handi
  • Into a heating pot, add cooking oil 1 tbsp, butter 2 tbsp, green cardamom 3 pods, bay leaf 1 pc, cloves 4 pc, cinnamon stick 1 pc, sliced onion 2 pc – stir fry the onions till light brown on medium to high heat.
  • Add ginger garlic 1 tsp, green chili slits 2 pc – cook it for about 2-3 minutes until raw garlic smell goes off.
  • Add tomato paste 1 pc and cook it for 4 -5 minutes on medium to high heat.
  • Add marinated chicken and cook it for 5-6 minutes on medium heat.
  • After, add water 1 cup.
  • Cover and let it cook for about 20 minutes on medium heat.
  • Add already prepared sesame almond paste into it.
  • Then, add cooking cream 2 tbsp, freshly chopped parsley 2 tbsp, and let it cook for the last 2 minutes.
  • Switch off the heat and serve it hot with chapati or rice.

  • Instead of butter, you could use ghee.
  • You could use any other nut instead of almonds.
  • You could substitute parsley with cilantro, according to your liking and availability.
