Ingredients

  • Marinating the chicken
  • 1/2 kg Chicken

  • 3 tbsp Soya sauce

  • 1/2 tsp Black pepper powder

  • 3 tbsp Vinegar

  • Preparing the chicken adobo
  • 5 tbsp Cooking oil

  • 1 pc Onion

  • 6 pc Garlic cloves

  • 3 pc Bay leaf

  • 1 tsp Black peppercorns

  • 1/2 tsp Lemon zest

  • 1 tbsp Brown sugar

  • 1/2 cup Water

Directions

  • Marinating the Chicken
  • Into a bowl add soya sauce 3 tbsp, vinegar 3 tbsp, black pepper powder 1 tsp, chicken 1/2 kg – stir everything properly – let the chicken marinate for 30 minutes.
  • Preparing the chicken adobo
  • Into a heating pot, pour cooking oil 3 tbsp and start adding the marinated chicken into the oil to fry.
  • Fry each side of the chicken for 5 minutes on medium to high heat.
  • Take out the fried chicken on a plate and keep it aside.
  • After this into a heating pot add cooking oil 2 tbsp, chopped onion 1 pc – fry the onions till it becomes translucent on medium heat.
  • Add chopped garlic 6 cloves and cook it until the raw garlic smell goes off.
  • Add bay leaf 3 pc and cook it for 2-3 minutes on medium-high heat.
  • Add fried chicken and leftover marinated sauce into the pot and mix well.
  • Add black peppercorns 1 tsp, brown sugar 1 tbsp, lemon zest 1/2 tsp, water 1/2 cup into it.
  • Cover with lid and let it cook for 20 minutes on low heat.
  • After, open the lid and cook the sauce of chicken for 6-7 minutes on high heat – to make the gravy thicker.
  • Switch off and serve the delicious chicken adobo.

Notes

  • You can also use particular Philippine soya sauce and sugarcane vinegar instead of the simple ones.
  • You can marinate the chicken overnight.
