The chicken recipe we try here is a spin-off from the famous Chicken ghee roast recipe which everyone loves in the South Asian subcontinent – We use butter and various other side spices to make this awesome chicken starter/ chicken side recipe, & no surprise, it came out finger-licking delicious!


  • Marinating the chicken
  • 6 pc Chicken drumsticks

  • 1/2 tsp Salt

  • 1/4 tsp Turmeric powder

  • 1/2 cup Curd

  • Preparing the chili paste
  • 4 pc Dry red chili

  • 10 pc Black peppercorns

  • 1 tbsp Coriander seeds

  • 1 tbsp Cumin seeds

  • 2 tsp Fennel seeds

  • 3 pc Cloves

  • 1 pc Ginger

  • 2 tbsp Lemon juice

  • 4 tbsp Water

  • Preparing the butter roast chicken drumsticks
  • 3 tbsp Butter

  • 1 pc Onion

  • 1/2 tsp Salt

  • 12 pc Dry curry leaves


  • Marinating the Chicken
  • In a bowl, take chicken drumsticks 6 pc, salt 1/2 tsp, turmeric powder 1/4 tsp, curd 1/2 cup – mix everything properly and let it marinate for 30 minutes.
  • Preparing the chili paste
  • Into a heating frying pan, add dry red chili 4 pc, black peppercorns 10 pc, coriander seeds 1 tbsp, cumin seeds 1 tbsp, fennel seeds 2 tsp – dry roast the whole spices for 2-3 minutes on low heat – transfer them to a plate to let them cool down at room temperature.
  • Transfer the dry roasted spices into a grinder, then add garlic 3 cloves, ginger 1 pc, lemon juice 2 tbsp, water 4 tbsp, and grind it to make chili masala paste – keep aside for later use.
  • Preparing the butter roast chicken drumsticks
  • Into a heating pot, add butter 3 tbsp, chopped onion 1 pc, and let it fry till the onions become translucent.
  • After, add already ground masala paste into it – let it fry for 4-5 minutes on medium heat.
  • Add marinated chicken into it and roast it for about 20 minutes on medium heat.
  • Add salt 1/2 tsp, dry curry leaves 12 pc, and cook for last 5 minutes on high heat.
  • Switch off the heat, take out and serve.
