What other sweets can we make with besan ?

Besides besan ki barfi, you have besan ka ladoo. You also have mysore pak, very similar to besan ki barfi, except more and excessive quantities of ghee or butter is used.

Why has the barfi become too hard ?

If the sugar syrup hasn’t achieved the perfect consistency, it can lead to a hard and brittle or too soft and soggy barfi. Make sure the syrup is consistent enough that only a single string is formed when pouring out from a spoon not in drops. Overcooked syrup leads to hard barfi while undercooked syrup leads to soft barfi, we need a perfect – crunchy and brownie like structure for the barfi.

Are barfis healthy ?

They are not considered as a part of healthy diet since it contains high sugar content. However besan has few healthy properties but if we are having them as a confectionary, make sure it is only in moderate amounts.

  • Preparing Sugar Syrup
  • 1/2 cup Sugar

  • 5 tbsp Water

  • Preparing Barfi
  • 1/2 cup Ghee

  • 1 cup Gram flour

  • 1/4 tsp Cardamom powder

  • 2  tbsp dry fruit


  • Into a heating wok add ghee 1/2 cup, gram flour 1 cup and let it roast for about 15-20 minutes on low heat.
  • Continuously stir the barfi and don’t leave the spatula.
  • Initially the barfi batter will be tough to stir but slowly slowly till will start getting lighter and easy to stir.
  • An amazing nutty and aromatic fragrance will start to produce and remember to stir constantly.
  • On other side start preparing the sugar syrup.
  • Into a heating frying pan add sugar 1 cup, water 5 tbsp and let it boil for about 7-8 minutes on high heat.
  • Boil the sugar syrup until it will start getting little thickened and sticky.
  • You have to boil it until the sugar syrup drop will start making a little string while dropping then you stop boiling it further.
  • Same time our besan will start getting little brown in colour and release ghee from it.
  • Now add cardamom powder 1/4 tsp and stir it.
  • Add boiling sugar syrup into it immediately and don’t keep it for long otherwise it will crystallized.
  • Mix the sugar syrup and besan properly and shift into the greased pan immediately.
  • Add chopped nuts 2 tbsp and press them a little bit with spatula.
  • Let the barfi cool down at room temperature for 15 minutes then cut it into square size pieces.

  • Stir the besan continuously during the cooking process otherwise the besan texture wont form.
  • Keep the heat low always during cooking process otherwise the besan can burn easily.
  • Add the heated sugar syrup rite away when its heated well enough to avoid the sugar crystallizing while adding to the besan mixture. The recipe wont form well if the sugar crystallizes.
